Healthy Banana Nut Bread

Ingredients:

  • 2 1/2 cups white sugar
  • 1 cup shortening
  • 3 eggs
  • 1 1/2 cups mashed bananas
  • 3 cups all-purpose flour
  • 1 1/4 cups buttermilk
  • 1 1/2 teaspoons baking soda
  • 1 1/2 teaspoons baking powder
  • 1 teaspoons vanilla extract
  • 1/2 cup chopped walnuts

Preparation:

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Cream together shortening and sugar.
  3. Add eggs one at a time, beating well after each addition.
  4. Mix in bananas, buttermilk, and vanilla.
  5. Mix in flour, baking powder, and soda.
  6. Stir in nuts if desired.
  7. Pour batter into two greased 9x5 inch pans.
  8. Bake for 50 to 60 minutes in the preheated oven, until a
    toothpick inserted into the center of the loaf comes
    out clean.

Makes 24 Servings



Bread Pudding with Whiskey Sauce

Ingredients:

    Bread Pudding:

    • 3 eggs, beaten
    • 1 cup white sugar
    • 2 1/2 cups whole milk
    • 1 1/2 teaspoons ground nutmeg
    • 4 apples - peeled, cored and sliced
    • 4 fresh peaches - peeled, pitted & sliced
    • 6 cups day old bread cubes
    • 6 tablespoons butter, cut into pieces

    Whiskey Sauce:

    • 1 cup whiskey
    • 1 pound butter
    • 2 cups white sugar

Preparation:

    Bread Pudding:

    1. Coat a 9x13 baking dish with cooking spray.
    2. Preheat oven to 350º F (175º C).
    3. In large bowl, combine eggs, 1 cup sugar, milk,
      cinnamon and nutmeg and stir until smooth.
    4. Fold in peaches, apples and bread cubes, until
      bread is well coated.
    5. Pour into prepared baking dish.
    6. Dot with 6 tablespoons butter.
    7. Bake in preheated oven for 1 hour, until set
    8. Serve warm with whiskey sauce

    Whiskey Sauce:

    1. In a medium heat, combine whiskey, 1 pound butter
      and 2 cups sugar.
    2. Cook and stir until sugar dissolves and sauce
      is smooth.
    3. Remove from heat and serve hot.

Makes 14 Servings



Heavenly Biscuits

Ingredients:

  • 2 1/2 cup all-purpose flour
  • 2 teaspoons white sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup shortening
  • 1/4 cup warm water
    (110º F / 45º C)
  • 1 (.25 ounce) package active dry yeast
  • 3/4 cup warm buttermilk (105 to 115 degrees F)

Preparation:

  1. In a large bowl combine flour, sugar, baking
    powder, and salt.
  2. With pastry blender or two knives, cut in shortening
    until mixture resembles course crumbs, set aside.
  3. Place warm water in warm bowl.
  4. Sprinkle in yest, stir until dissolved.
  5. Add yeast mixture and mixture and warm buttermilk
    to dry ingredients, blend well.
  6. Remove dough to floured surface.
  7. Knead dough 10 to 15 times, form into ball.
  8. Roll dough to 3/4 inch thickness.
  9. Cut into 2-1/2 inch biscuts.
  10. Cover and let rise until doubled in bulk,
    about 30 to 45 minutes.
  11. Bake at 400º F (205º C) for 15 minutes
    or until done.
