Brown Sugar Cookies

Ingredients:

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 pinch salt
  • 1/2 cup butter, softened
  • 1 egg
  • 1 teaspoon heavy whipping cream
  • 1 1/2 teaspoons vanilla extract
  • 1/2 cup paked brown sugar

Preparation:

  1. In a large mixing bowl, cream the butter and brown sugar.
  2. Beat in egg, heavy cream, and vanilla.
  3. Slowly add in flour, baking powder and salt.
  4. If dough seems to dry, add water, 1/2 teaspoon at a time.
  5. Cover and refrigerate for 4 hours
  6. Preheat oven to 375 degrees F
  7. Roll out dough on a floured surface to a thickness of 1/8
    of an inch.
  8. Cut with cookies cutters and place 1 1/2 inches apart on
    cookie sheets.
  9. Bake 8 to 10 minutes, until lightly colored.

Makes 24 Servings



Delightfully Delicious Chip Cookies

Ingredients:

  • 1 cup packed brown sugar
  • 1 cup white sugar
  • 1 cup shortening
  • 1 cup vegetable oil
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 4 cups all-purpose flour
  • 4 teaspoons cream of tartar
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 cups semisweet chocolate chips

Preparation:

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, beat together the white sugar, brown
    sugar, oil and shortening until smooth.
  3. Stir in eggs and vanilla, beating well after
    each addition.
  4. Combine the flour, cream of tartar, baking soda and salt
    stir into the sugar mixture.
  5. Finally, fold in the chocolate chips.
  6. Drop by heaping spoonfuls onto an unprepared cookie sheet.
  7. Bake for 8 to 10 minutes in the preheated oven.
  8. Remove from baking sheet to cool on wire racks.

Makes 36 Servings



Honey Bars

Ingredients:

  • 1 1/3 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 eggs
  • 1 cup honey
  • 2 teaspoons almond extract
  • 1 cup dates, pitted and chopped
  • 1 cup chopped almonds
  • 1/3 cup confectioners' sugar for decoration

Preparation:

  1. Combine flour, baking powder and salt, and set aside.
  2. Beat eggs in a large bowl until thick and lemon colored.
  3. Beat in honey and almond extract.
  4. Gradually add in dry ingredients blending well.
  5. Stir in dates and almonds.
  6. Spread evenly in a 13x9 inch greased pan.
  7. Bake at 350 degrees F (175 degrees C) 12-15 minutes until
    lighty brown on top.
  8. Cool 2 minutes in pan.
  9. Cut into bars
  10. When cool, sprinkle with confectioners' sugar.

Italian Anisette Cookies

Ingredients:

  • 4 cup all-purpose flour
  • 1 cup white sugar
  • 1/2 cup milk
  • 2 eggs
  • 6 tablespoons baking powder
  • 3/4 cup vegetable oil
  • 1 tablespoon anise extract
  • 1 teaspoon anise extract
  • 1 cup confectioners' sugar
  • 2 tablespoons hot water

Preparation:

  1. Preheat oven to 375 degrees F (190 degrees C)
  2. In large bowl, mix flour, baking powder and white sugar.
  3. Make a well in the center and add oil, milk, 1 tablespoon anise ectract,
    and eggs.
  4. Mix together until dough is sticky.
  5. Oil fingers and pinch off dough in 1 inch pieces.
  6. Roll into a ball and place on a lightly greased cookie sheet, 1 inch
    apart, flatten top slightly.
  7. Bake for 8 minutes.
  8. Dip cookies in icing while warm

Icing:

  1. Blend in 1 teaspoon anise extract and enough hot water to 1 cup
    confectioner's sugar to form a smooth icing.
