Aloha Cheesecake
Ingredients:
- 1 cup vanilla wafer crumbs
- 1/4 cup margarine butter, melted
- 2 eggs
- 16 ounce cream cheese, softened
- 1/3 cups sugar
- 2 teaspoons of milk
- 1/2 cup macadamia nuts, toasted
- 8 1/2 ounces crushed pineapple, drained
- 1 medium kiwi peeled, sliced
Preparation:
- Combine crumbs and margarine.
- Press onto bottom of 9-inch springform pan.
- Bake at 350 degrees F(190 degrees C) for 10 minutes.
- Mix cream cheese, sugar and milk, mixing at
medium speed until well blended.
- Add eggs one at a time, beating well after each addition.
- Stir in nuts if desired.
- Pour batter over crust.
- Bake for 45 minutes in the preheated oven
- Loosen cake from rim of pan.
- Cool before removing rim of pan.
- Before serving, top with fruit.

Apple Fritters
Ingredients:
- 2 cup all-purpose flour
- 1/4 cup white sugar
- 1 tablespoon baking powder
- 1 teaspoon ground nutmeg
- 1 teaspoon salt
- 2 eggs
- 1 cup milk
- 2 quarts oil for deep frying
- 4 large apples, peeled and cored
- 1/2 cup confectioners' sugar for dusting
Preparation:
- In a medium bowl, mix together flour, sugar, baking
powder, nutmeg and salt.
- In a separate bowl beat together eggs and milk.
- Stir milk mixture into flour mixture until smooth.
- Heat oil to 375º F(190º C) in a deep fryer
or heavy bottomed deep pot or skillet.
- Slice apples in 1/2 inch rings.
- Dip apples slices in batter and fry, a few at a time,
turning once, until golden.
- Drain on papper towels and dust with confectioners' sugar.

Blueberry Cobbler
Ingredients:
- 1 cup whole wheat pastry flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon white sugar
- 1/2 cup lowfat buttermilk
- 2 tablespoon honey
- 1 tablespoon white sugar
- 1 tablespoon conrstarch
- 1 teaspoon ground cinnamon
- 1 cup water
- 2 tablespoons lemon juice
- 3 cups fresh blueberries
Preparation:
- Preheat oven to 400º F (200º C)
Biscuit Topping:
- In a medium bowl combine flour, baking powder,
baking soda, and 1 tablespoon sugar.
- Mix well then stir in buttermilk just until all
ingredients are moistened and dough forms
a ball.
- Set aside.
Berry Filling:
- In a large saucepan combine honey, 1 tablespoon sugar
cornstarch, cinnamon, water, and lemon juice.
- Mix until smooth, then add berries.
- simmer over medium heat, stirring gently, until
thickened (about 10 minutes).
- Spoon berry mixture into an 8x11 inch nonstick
casserole dish.
- Drop biscuit dough onto berry mixture by tablespoonfuls.
- Bake in preheated oven for 20 minutes, or until
biscuits are lightly browned.

Grandma's Rice Pudding
Ingredients:
- 1 cup cooked white rice
- 1 quart milk
- 1/2 cup white sugar
- 1/4 teaspoon salt
- 2 eggs, beaten
- 1/2 teaspoon vanilla extract
- 1 teaspoon butter
- 1 pinch ground nutmeg
Preparation:
- Preheat oven to 350º F(175º C).
- Butter a 2 quart baking dish
- In a 2 quart saucepan over medium heat, scald the milk
and remove from heat.
- Add rice, sugar and salt.
- Mix well and slowly, add the eggs and vanilla.
- pour mixture into a 2 quart baking dish.
- Sprinkle nutmeg on top.
- Bake for 40 minutes.
- Stir pudding after 20 minutes.

Reese's Peanut Butter Pie
Ingredients:
- 1 (9 inch) prepared graham cracker crust
- 1 (3.9 ounce) package instant chocolate pudding mix
- 2 cups milk
- 1 (8 ounce) container frozen whipped topping, thawed
- 10 peanut butter cups, cut into 1/2 inch pieces
Preparation:
- In a medium-size mixing bowl, combine pudding mix and milk.
- Whisk until smooth.
- Allow pudding to set up 5 minutes, then fold in whipped
topping and peanut butter cups.
- Pour mixture into crust
- Chill at least 1 hour before serving.
Makes 8 Servings

Southern Boiled Custard
Ingredients:
- 1 quart whole milk
- 5 eggs
- 1 cup white sugar
- 1 teaspoon vanilla extract
Preparation:
- Into the lower pot of a double boiler, add water.
- In the upper pot, add milk.
- Heat through over medium heat
- Beat eggs together until light.
- Add sugar and mix well.
- Pour a small portion of hot milk into the eggs and sugar to warm
and thin this portion.
- Pour slowly into hot milk.
- Cook, stirring constantly until it will coat a spoon.
- Do not over cook.
- Add vanilla extract.
- Chill in refrigerator before serving.
