Aloha Cheesecake

Ingredients:

  • 1 cup vanilla wafer crumbs
  • 1/4 cup margarine butter, melted
  • 2 eggs
  • 16 ounce cream cheese, softened
  • 1/3 cups sugar
  • 2 teaspoons of milk
  • 1/2 cup macadamia nuts, toasted
  • 8 1/2 ounces crushed pineapple, drained
  • 1 medium kiwi peeled, sliced

Preparation:

  1. Combine crumbs and margarine.
  2. Press onto bottom of 9-inch springform pan.
  3. Bake at 350 degrees F(190 degrees C) for 10 minutes.
  4. Mix cream cheese, sugar and milk, mixing at
    medium speed until well blended.
  5. Add eggs one at a time, beating well after each addition.
  6. Stir in nuts if desired.
  7. Pour batter over crust.
  8. Bake for 45 minutes in the preheated oven
  9. Loosen cake from rim of pan.
  10. Cool before removing rim of pan.
  11. Before serving, top with fruit.

Makes 8 Servings



Apple Fritters

Ingredients:

  • 2 cup all-purpose flour
  • 1/4 cup white sugar
  • 1 tablespoon baking powder
  • 1 teaspoon ground nutmeg
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup milk
  • 2 quarts oil for deep frying
  • 4 large apples, peeled and cored
  • 1/2 cup confectioners' sugar for dusting

Preparation:

  1. In a medium bowl, mix together flour, sugar, baking
    powder, nutmeg and salt.
  2. In a separate bowl beat together eggs and milk.
  3. Stir milk mixture into flour mixture until smooth.
  4. Heat oil to 375º F(190º C) in a deep fryer
    or heavy bottomed deep pot or skillet.
  5. Slice apples in 1/2 inch rings.
  6. Dip apples slices in batter and fry, a few at a time,
    turning once, until golden.
  7. Drain on papper towels and dust with confectioners' sugar.

Makes 20 Servings



Blueberry Cobbler

Ingredients:

  • 1 cup whole wheat pastry flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon white sugar
  • 1/2 cup lowfat buttermilk
  • 2 tablespoon honey
  • 1 tablespoon white sugar
  • 1 tablespoon conrstarch
  • 1 teaspoon ground cinnamon
  • 1 cup water
  • 2 tablespoons lemon juice
  • 3 cups fresh blueberries

Preparation:

  1. Preheat oven to 400º F (200º C)
  2. Biscuit Topping:

    1. In a medium bowl combine flour, baking powder,
      baking soda, and 1 tablespoon sugar.
    2. Mix well then stir in buttermilk just until all
      ingredients are moistened and dough forms
      a ball.
    3. Set aside.

    Berry Filling:

    1. In a large saucepan combine honey, 1 tablespoon sugar
      cornstarch, cinnamon, water, and lemon juice.
    2. Mix until smooth, then add berries.
    3. simmer over medium heat, stirring gently, until
      thickened (about 10 minutes).
    4. Spoon berry mixture into an 8x11 inch nonstick
      casserole dish.
  3. Drop biscuit dough onto berry mixture by tablespoonfuls.
  4. Bake in preheated oven for 20 minutes, or until
    biscuits are lightly browned.

Makes 6 Servings



Grandma's Rice Pudding

Ingredients:

  • 1 cup cooked white rice
  • 1 quart milk
  • 1/2 cup white sugar
  • 1/4 teaspoon salt
  • 2 eggs, beaten
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon butter
  • 1 pinch ground nutmeg

Preparation:

  1. Preheat oven to 350º F(175º C).
  2. Butter a 2 quart baking dish
  3. In a 2 quart saucepan over medium heat, scald the milk
    and remove from heat.
  4. Add rice, sugar and salt.
  5. Mix well and slowly, add the eggs and vanilla.
  6. pour mixture into a 2 quart baking dish.
  7. Sprinkle nutmeg on top.
  8. Bake for 40 minutes.
  9. Stir pudding after 20 minutes.

Makes 6 Servings



Reese's Peanut Butter Pie

Ingredients:

  • 1 (9 inch) prepared graham cracker crust
  • 1 (3.9 ounce) package instant chocolate pudding mix
  • 2 cups milk
  • 1 (8 ounce) container frozen whipped topping, thawed
  • 10 peanut butter cups, cut into 1/2 inch pieces

Preparation:

  1. In a medium-size mixing bowl, combine pudding mix and milk.
  2. Whisk until smooth.
  3. Allow pudding to set up 5 minutes, then fold in whipped
    topping and peanut butter cups.
  4. Pour mixture into crust
  5. Chill at least 1 hour before serving.

Makes 8 Servings



Southern Boiled Custard

Ingredients:

  • 1 quart whole milk
  • 5 eggs
  • 1 cup white sugar
  • 1 teaspoon vanilla extract

Preparation:

  1. Into the lower pot of a double boiler, add water.
  2. In the upper pot, add milk.
  3. Heat through over medium heat
  4. Beat eggs together until light.
  5. Add sugar and mix well.
  6. Pour a small portion of hot milk into the eggs and sugar to warm
    and thin this portion.
  7. Pour slowly into hot milk.
  8. Cook, stirring constantly until it will coat a spoon.
  9. Do not over cook.
  10. Add vanilla extract.
  11. Chill in refrigerator before serving.

Makes 8 Servings
