All Day Macaroni and Cheese

Ingredients:

  • 8 ounces elbow macaroni
  • 4 cup shredded sharp Cheddar Cheese
  • 1 (12 fluid ounce) can evaporated milk
  • 1 1/2 cups milk
  • 2 eggs
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper

Preparation:

  1. In a large pot, cook the macaroni in boiling water for 10 minutes,
    or until dente, & drain.
  2. In a large bowl, mix the cooked macaroni, 3 cups of the sharp Cheddar Cheese,
    evaporated milk, milk, eggs, salt, and pepper.
  3. Transfer to a slow cooker that has been coated with non-stick cooking spray.
  4. Sprinkle with the remaining 1 cup of shredded sharp Cheddar Cheese.
  5. Cover, and cook on low for 5 to 6 hours, or until the mixture is firm and
    golden around the edges.
  6. Do not remove the cover or stir the mixture until the mixture has finished cooking.
  7. Serve warm.

Makes 6 Servings



Banana Pancakes

Ingredients:

  • 1cup all-purpose flour
  • 1 tablespoon white sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 egg, beaten
  • 1 cup milk
  • 2 tablespoons vegetable oil
  • 2 ripe bananas, mashed

Preparation:

  1. Combine flour, white sugar, baking powder and salt.
  2. In a separate bowl, mix together egg, milk vegetable
    oil and bananas.
  3. Stir flour mixture into banana mixture;
    batter will be slightly lumpy.
  4. Heat lightly oiled griddle or frying pan over medium
    high heat.
  5. Pour or scoop the batter onto the griddle, using
    approximately 1/4 cup for each pancake.
  6. Cook until pancakes are golden brown on both sides;
    serve hot.

Makes 6 Servings



Cheese Potato Puff

Ingredients:

  • 12 potatoes-medium & peeles
  • 1 teaspoon salt
  • 3/4 cup butter
  • 2 cup cheddar cheese
  • 1 cup milk
  • 2 eggs beaten

Preparation:

  1. Place potatoes in a large kettle; cover with water.
  2. Add 1/2 teaspoon of salt; cook until tender.
  3. Drain kettle; mash potatoes until smooth.
  4. In a saucepan, cook and stir butter, cheese, milk and remaining salt until smooth.
  5. Stir into potatoes; fold in eggs.
  6. pour into a greased 3 quart baking dish.
  7. Bake, uncovered, at 350 degrees for 40 minutes or until
    puffy and golden brown.

Makes 6 Servings



German Spaetzle Dumplings

Ingredients:

  • 1 cup all-purpose flour
  • 1/4 cup milk
  • 2 eggs
  • 1/2 teaspoon ground nutmeg
  • 1 pinch freshly ground white pepper
  • 1/2 teaspoon salt
  • 1 gallon hot water
  • 2 tablespoons butter
  • 2 tablespoons chopped fresh parsley

Preparation:

  1. Mix together flour, salt, white pepper, and nutmeg.
  2. Beat eggs well, and add alternately with the milk to dry ingredients.
  3. Mix until smooth.
  4. Press dough through spaetzel maker, or a larger holed sieve or metal grater.
  5. Drop a few at a time in simmering liquid.
  6. Cook 5 to 8 minutes. Drain well.
  7. Saute cooked spaetzle in butter or margarine.
  8. Sprinkle chopped fresh parsley on top, and serve.

Makes 6 Servings



Sherry Egg Nog

Ingredients:

  • 1 (2 ounce) cream sherry
  • 1 tablespoons powdered sugar
  • 1 egg
  • Milk

Preparation:

  1. Shake sherry, powdered sugar, and egg with ice and
    strain into a collins glass.
  2. Fill with milk and stir.
  3. Sprinkle nutmeg on top and serve.

Makes 4 Servings
